| Officially introduced by the Mayor of Qingdao, Mats Östblom gave his opening address on the first day under the scrutiny of the cameras of a China Television crew. Later, speaking to an audience of some 300 people, Mats focused his presentation on the latest trends and hot issues in the international restaurant industry.
He reminded his audience of the scope of this thriving industry which counts millions of restaurants around the world and generates billions of dollars in revenue. China’s own hotel, restaurant and institutional catering industry alone generated some 120 billion USD in 2006. Professionals in this booming industry are eager to learn more about the latest developments in design, menu concepts and health trends. Drawing on his own experience in Sweden, Mats outlined 10 Top International Trends, including : quick-fix prepared food; an interest in naturally healthy ingredients; fancy premium gourmet foods; and food safety. He also drew attention to new factors affecting the Foodservice industry worldwide, increasing automation of operations, the use of wireless applications in restaurants, mobile ordering and payment and digital menu boards.
The Festival was also the opportunity for a private meeting and exchange of views with Ms Han Ming, Chairwoman of the China Hospitality Association, focusing on the current state and future prospects of the China Hotel Industry.
